Tortilla Trufada from TATEL Miami

Confit potatoes:

5kg potatoes
Place in hotel pan and cover with cooking oil
Cool in oven at 350 for 40 minutes

Potato foam:
1kg potatoes
2lt milk
Cook potatoes and and mash then add milk and season with salt and pepper then place in a foam gun.

100gr confit potatoes
2 whole eggs
10gr tartufata
Mix well till almost smooth
Heat up the pan with oil and add mix
Flip twice with no color on the omelette.
Place foam gun in omelette and add potato foam

1. Mix the eggs and the potatoes and stir so there is no big chunks. Season with salt.
2. Add the truffle paste and stir
3. In a small pan, add oil and heat up
4. Flip twice without cookout and turn off fire. Add the potato espuma and flip tortilla in the plate.
5. Top with chives
